What is XO sauce you ask?
It's a spicy condiment containing all the best stuff from the sea: dried scallops and dried shrimps, originally from Hong Kong.
It is an umami bomb and can be put on literally everything.
What is so special about this recipe? It is Mama da Costa's OG recipe and unlike the XO sauces you can get around, this one is actually packed with the best scallops and shrimps.
A quick reminder, XO sauce is made with shellfish and meat, so make sure you don’t share it with your vegetarian friends, or the ones allergic to shellfish.
Make sure you keep it refrigerated and always use a clean spoon/utensil to scoop out your sauce. If you follow these instructions, your sauce should keep for over 6 weeks, but we're 100% sure you'll love it so much it will be finished within days.
